Intensifican controles en carnicerías para prevenir el Síndrome Urémico Hemolítico
Días atrás, la confirmación de un caso del conocido como “mal de la carne cruda” en una niña de 7 de años que fue derivada a la ciudad de Córdoba disparó la alarma, sin embargo, desde el área de Bromatología de la municipalidad destacan que “en la ciudad afortunadamente no tenemos otros casos, pero siempre en esta época del año hay que estar atentos”.
A raíz de un caso de síndrome urémico hemolítico (SUH) que se registró en nuestra ciudad en una niña de 7 años que fue derivada a la ciudad de Córdoba, se intensifican los controles en carnicerías, despensas y comercios de la ciudad.
Desde el área de Control Alimentario de la secretaría de Salud de la municipalidad confirmaron que es el único caso reportado y recomendaron el lavado de manos y las buenas prácticas de higiene en la elaboración de los alimentos para prevenirlo.
El SUH, también conocido como "mal de la carne cruda", es una enfermedad muy grave causada por una bacteria llamada Escherichia coli que se encuentra en el intestino de las vacas y otros animales de granja. Se presenta con mayor frecuencia en niños menores de 5 años, sin embargo, niños más grandes y adultos pueden padecerla. Afecta especialmente los riñones y puede ser mortal.
Se contrae al consumir agua o alimentos contaminados y mal cocidos; en especial, la carne.
La jefa de Control Alimentario, Marisa Coria afirmó a LA VOZ DE SAN JUSTO que se intensificaron los controles bromatológicos tanto en carnicerías, despensas, supermercados "para verificar la procedencia segura de la mercadería, según el Código Alimentario Argentino y afortunadamente no encontramos ninguna irregularidad ni casos positivos de contaminación. Los controles siguen realizándose".
"En la ciudad afortunadamente no tenemos otros casos, pero siempre en esta época del año hay que estar atentos para prevenir este síndrome -asociado a las carnes mal cocidas- que afecta a los niños menores de 5 años, adultos mayores y personas inmunodeprimidas", dijo.
El lavado de manos es clave
La bacteria Escherichia coli que provoca el síndrome, no solamente puede estar presente en carnes, sino también en verduras crudas, agua que no es potable.
Por eso, Coria recordó que para prevenirlo "es fundamental el lavado de manos, usar agua potable, refrigerar correctamente no cortar la cadena de frío no dejar productos fuera de la heladera durante más de dos horas".
Añadió que no solamente existe el peligro del síndrome urémico hemolítico sino el de otras enfermedades transmitidas por alimentos. Cualquier mala manipulación que hagamos en la elaboración o cocción nos puede llevar a sufrir una enfermedad transmitida por los alimentos, las intoxicaciones.

Para asegurarnos que las carnes que consumimos son de calidad e inocuas, las carnicerías deben contar con instalaciones y equipos de manipulación en perfecto estado de limpieza e higiene, como los cuchillos, bandejas, sierra de corte, máquina de picar carne, balanzas, heladeras, mostrador, entre otros.
En San Francisco son 24 los locales que cuentan con la oblea de "Carnicerías Saludables" en el marco de un programa aplicado por la provincia. Coria afirmó que el programa "no se volvió a aplicar para sumar carnicerías pero se continúan los controles y educando tanto al elaborador como al consumidor".
Cuidado con la salmonella
Otro alimento con el que hay que estar atentos es el huevo, ya que puede provocar salmonelosis un tipo de intoxicación alimentaria causada por la bacteria salmonella (que por lo general vive en los intestinos de los animales y humanos y se expulsan a través de las heces).
Al respecto la jefa de Control Alimentario explicó que se controla a los locales habilitados y se hace hincapié "en que los huevos estén limpios de las heces de las gallinas que es la que puede tener la bacteria y que se mantengan a temperaturas acordes para su correcto mantenimiento".
Aconsejó que cuando compramos huevos, no se deben lavar antes de guardar en la heladera, porque la cáscara es permeable y si se lavan pierden esa permeabilidad y pueden contaminarse con otros alimentos. Si se deben lavar cuando los vamos a consumir.
Además recomendó hacer la prueba del huevo, esto es, "colocarlo en un vaso con agua fría y si flota no se puede consumir, porque ya pasó su tiempo de vida útil o se pudo haber contaminado".
Recomiendan limpiar los tanques una vez al año
También se realizan controles del agua y hasta el momento no encontraron irregularidades aunque Coria recordó la importancia del lavado del tanque de agua de la vivienda por lo menos una vez al año para eliminar bacterias que puedan acumularse.
"Hacemos el control de la red de agua potable pero no podemos acceder al tanque y no sabemos en qué condiciones está. El agua puede llegar bien a la vivienda por el caño troncal pero contaminarse en el tanque si no se limpia una vez al año", advirtió.
Comentó que hay vecinos que tienen problemas, "hacemos los análisis y el resultado no es bueno y la mayoría de las veces es porque el tanque no está en condiciones. A veces no está tapado correctamente y se pueden meter animales, otras, aunque esté tapado pasa mucho tiempo sin limpiarse y comienza a formarse moho adentro".
