Cerveza dorada y suave, la favorita de los sanfrancisqueños
Este 19 de enero, Día del Trabajador Cervecero, el maestro Mauricio Barbero reveló cuál es la que preferimos tomar en la ciudad.
Desde hace un tiempo a esta parte, la cerveza se convirtió en parte del ritual de los sanfrancisqueños. Tal es la moda por esta bebida alcohólica que en la ciudad se pueden encontrar muchos bares que ofrecen variedad de versiones artesanales aunque hay una marcada tendencia en el paladar.
Una cerveza dorada que la mayoría disfruta, que todos acompañamos con un poquito de maní pero que sin lugar a dudas, pasó a ser favorita en las tardes y noches en esta parte del departamento San Justo.
El maestro cervecero Mauricio Barbero (37), creador de Aries Cerveza Artesanal, reveló cuál es el gusto de los sanfrancisqueños entre tanta variedad que hay en el mercado. "Por estilo, los sanfrancisqueños eligen Summer Golden Ale, una cerveza dorada, de bajo cuerpo, graduación alcohólica y bajo amargor relativo lo que le da gran tomabilidad. Muchos clientes le dicen ´Chopp´".
Esta bebida, "suele ser una invitación a consumir en ámbitos sociales, para compartir la experiencia", comentó Barbero.
Pero esa cervecita bien fría no se disfruta sola. En la mayoría de los encuentros, el maní se convierte en un compañero inconfundible. "Es un maridaje culturalmente muy difundido y bastante rico con la mayoría de los estilos de cerveza".

Un cambio cultural
El maestro cervecero comentó que este boom de la cerveza se asemeja al de otras bebidas y llegan para quedarse. "El público abandonó hábitos de consumo masivo y los reemplazó por experiencias de consumo más satisfactorias, sin embargo, la cerveza artesanal representa en la Argentina un porcentaje muy bajo del consumo total de cerveza y además el consumo per cápita en nuestro país es bajo, lo que indica que hay mucho para crecer".
Según Barbero, "la primera cervecería artesanal fue El Bolsón, en la población homónima en 1982, luego siguió Blest en Bariloche. Sin embargo, Antares fundada en Mar del Plata en 1998, fue la que más hizo por la difusión cultural de la cerveza", contó.
En ese sentido y con el paso del tiempo, "en la década pasada se vio el mayor crecimiento del sector, motivado en el surgimiento de un público joven que busca mejores productos y ambientes adecuados donde consumirlos como los bares cerveceros".
"La tendencia en la ciudad la inició Fabrizio Ferrando con su marca Wikinger en 2010 aproximadamente, un adelantado. Detrás, seguimos quienes teníamos el estímulo de beber algo tan rico elaborado por uno mismo y poder compartirlo con nuestro entorno. Luego, llegó desde las grandes urbes un público universitario demandando la experiencia de juntarse con amigos y disfrutar de una buena cerveza, privilegiando calidad de producto, conociendo estilos. Esto último ocurrió en los últimos 5 años".
La cantidad de bares dedicados a las cervezas artesanales "es parte de la expansión cultural. El crecimiento de las grandes ciudades llegó a San Francisco y la cerveza artesanal de calidad es un camino de ida para quienes la disfrutan".
"En la década pasada se vio el mayor crecimiento del sector, motivado en el surgimiento de un público joven que busca mejores productos y ambientes adecuados donde consumirlos como los bares cerveceros".
Aprendiendo con el tiempo
Mientras nos vamos acostumbrando a los nombres y los sabores, Barbero aseguró que queda mucho por aprender. Una de esas cuestiones es la de pensar en pagar poco para elaborar un producto que lleva tiempo de elaboración, dedicación e insumos de primera calidad. "Hay un pequeño segmento, por suerte, que aún cree que se puede lograr calidad a muy bajo precio. Eso es bastante difícil en cualquier rubro que uno analice", expresó el creador de Aries.
Otra cuestión tiene que ver con cómo nombramos a las cervezas. "Poco a poco vamos logrando mejorar la terminología ´rubia, roja, negra´. El mundo de la cerveza se compone de cientos de estilos, con una hermosa historia e identidad geográfica, cada uno de ellos".
"La hiper industrialización hizo que se hablara de colores en lugar de estilos. Hoy el cambio cultural hace que hasta las cervezas industriales declaren estar comprendidas dentro de un estilo en sus etiquetas, lo que no siempre es correcto, pero indica un cambio en el mercado".
De profesión, cervecero
La vida de Mauricio está marcada por la cerveza. Cada paso que dio, tanto en la ciudad como en otras regiones del país, se vincularon directamente con la elaboración de la bebida. "La mayoría de los que emprendimos en este rubro, llegamos por curiosidad y se convirtió en una pasión que motiva a estar todo el tiempo actualizando conocimientos, mejorando siempre".
"La cerveza es pasión y también sentido de pertenencia, es como componer música, sentir que el público disfruta de tu creación y el mejor premio es escuchar que alguien te dice la frase ´tu cerveza me encanta´".
"A la vez, pertenecés a un grupo de personas que son los colegas cerveceros y que entienden que hacer cerveza es ciencia porque siempre estamos actualizando prácticas y procesos al ritmo de los nuevos adelantos científicos", agregó.
"La cerveza es trabajar en lo que uno ama hacer y una forma de vida. Así como un deportista se entrena continuamente para mejorar sus marcas, un cervecero busca siempre mejorar sus cervezas", concluyó.
Día del Trabajador Cervecero
Este 19 de enero se celebra el Día del Trabajador cervecero. El motivo, según el sitio mundocerveza.com, es que en un día como hoy de 1936, durante un reunión realizada en la ciudad de Quilmes, en la que participaron las autoridades de la Sociedad Obreros Quilmes, del Sindicato Obreros Maltería Hudson, de la Sociedad Obreros Bilz y el Sindicato Obreros Bieckert, se constituyó la Federación de Obreros Cerveceros y Afines de la República Argentina (Focara), que actualmente representa a los trabajadores cerveceros, malteros, de levadura y afines de todo el país, bajo la denominación Federación Argentina de Trabajadores Cerveceros y Afines (F.A.T.C.A).
El Día del Trabajador Cervecero se estableció al firmarse el Primer Convenio Colectivo, logrado tras diversas gestiones ante la Cámara Cervecera Argentina y el Ministerio de Trabajo.
El 5 de enero de 1949 la Federación firmó el acuerdo que benefició a todos los trabajadores cerveceros del país.
En él se estableció, entre otras condiciones, las escalas de salarios, categorías, jornadas laborales, escalafón, pago de horas extras al cien por ciento, vacaciones, licencias por enfermedad y accidentes, estabilidad y garantía de trabajo.
En ese convenio, que comenzó a regir a partir del 1° de Octubre de 1950, se instituyó el 19 de enero como Día del Trabajador Cervecero, considerándose la fecha como feriado no laborable pago.
